How food drying can stop food waste and climate emissions

Reducing the carbon footprint of the food sector is increasingly urgent. The United Nations reports that the food sector is responsible for one-third of all greenhouse gas emissions, with other estimates ranging from 14 % to 50 %.

Most discussions about climate change and reducing carbon emissions always touch on food production. The same applies to the debate on protecting biodiversity through ending deforestation and habitat conversion. So it's not surprising that the low-hanging fruit of food waste is often high on the list of solutions. (Arlin Wasserman, more at weforum.org)
